Interests: My main interests are related to the development and validation of new analytical methods for determining the presence of toxins, contaminants, drugs and other analytes of concern in foods, biological matrixes and pharmaceutical formulations. I usually employ Chromatography techniques (GC, HPLC, UPLC) coupled with fluorescence, UV or MS spectrometer detectors. Also, I apply these methods to the analysis of the aforementioned analytes in samples. More specifically, the objective of my research work addresses the study of the presence of mycotoxins in different raw materials, food and biological matrixes. Mycotoxins are toxic compounds produced by fungi that contaminate food and raw materials which can reach humans or animals and affect their health. It is necessary to develop and validate analytical methods for the study of these toxins in a sufficient number of samples and to study those factors that may influence the exposure of humans and animals to them.

Special Issue Information
Dear Colleagues,
Mycotoxins are toxic compounds produced by fungi that contaminate food and raw materials. They can severely affect human health after chronic exposure and, thus, their presence at low concentrations is of great concern in food safety. This Special Issue comprises articles or reviews related to the presence of these toxins in beverages, the effects of beverage processing on mycotoxin contamination, the impact of their presence on human health, and analytical methodologies used for their determination in beverages. Due to the fact that co-occurrence of mycotoxins in a food is the most likely scenario, manuscripts devoted to this aspect are especially welcome.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All papers will be peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Beverages is an international peer-reviewed open access quarterly journal published by MDPI.
Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 1400 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
