Special Issue Information

Dear Colleagues,

Food safety is undoubtedly a topical issue. Due to the increase of a multiplicity of human activities (industry, transport, intensive agriculture, etc.)  over the last few years, diet has become one of the main sources of toxic substances for humans. A variety of chemical pollutants originating from anthropogenic activities easily transfer from the environment to food supply chain. Among these, industrial by-products and compounds present in primary food production, like pesticide residues and veterinary drug products, need to be mentioned.  In addition, chemical substances forming in food during manufacturing processes or used in food contact materials can also contaminate food.

Apart the chemical hazard, the risk associated with the microbiological contamination has to be considered. Several organisms as fungi, bacteria, and viruses in food produce toxins that cause severe negative effects on human health.

Based on these considerations, the prevention and monitoring of food contamination is a public priority to assure consumer’s health. The effectiveness of both these actions depends on the availability of high-quality analytical methods that improve the simplicity, selectivity and sensitivity of the detection leading to accurate and valid results.

This special issue invites researchers to submit original research papers and reviews on new approaches to the chemical and toxin analysis into food and innovative tools for the evaluation of their toxicity in the perspective of a successful risk assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
