In recent decades, the importance of antioxidants has been scientifically established in a variety of research fields including health, nutrition and various biomedical applications. Oxidative biomarkers are increasingly needed to assess certain clinical conditions or to determine the effectiveness of antioxidant compounds. However, the methods for measuring antioxidants and oxidative stress are not completely standardized and can vary widely, making it difficult to use these parameters as oxidative markers. This special issue aims to collect as much as possible of the different and most important methods of assessing antioxidants and oxidative stress in different matrices and models. All research works that precisely determine methods for the assessment of total antioxidant capacity, antioxidant enzymes, low molecular weight antioxidant compounds but also quantification in the production of ROS or RNS or other biomarkers of oxidative stress will be welcomed. All assessment methods to determine redox alteration of proteins, lipid peroxidation levels and redox modifications on DNA will be included. Comparative reviews will also be useful to determine valid standards of measurement that can then be used as oxidative biomarkers.
