Special Issue Information
Dear Colleagues,
Colorants are not used only in food industry, but also in other products. This issue will thus cover a wide range of research areas concerning natural colorants. Research or review articles are welcomed, including (but not limited to) identification of novel natural colorants, advances in sample treatment, improvements in analytical methods for quantitation and quality control purposes, new trends in colorants purification, stability studies, theoretical and experimental studies on the (bio)chemical properties of natural colorants, and potential industrial applications of new natural colorants.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
