Special Issue Information

Dear Colleagues,

This section is intended to present a revision on the instrumental analytical techniques and methods used to extract and measure food bioactives together with their main applications in food science research. The art of modern analytical instruments, methodologies, and applications for food bioactives includes the present and future challenges in food bioactive analysis, the application of “omics”, and also provides an overview on the different methods to measure their bioaccessibility, bioavailability, and bioactivity. Comparison between in vivo and in vitro procedures used to determine bioaccessibility, bioavailability, and bioactivity will be considered taking into account the strengths and limitations of each experimental technique, along with an intensive description of actual approaches applied to assess them. Applications of food bioactives will consider studies regarding carotenoids, polyphenolic compounds, glucosinolates, vitamin E, and phytosterols, for example.
