Special Issue Information

Dear Colleagues,

A number of foods exist in the form of gels, such as jams, desserts, and yogurt, which are composed of a mixture of different ingredients. The consensus is that understanding the gel structure is a prerequisite to attain the desired sensory perception, stability, and convenience of the developed products. In addition, the advances in food science and technology and new food trends have led to new endeavors in the field, opening up new opportunities.

The topic collection “Food Gels” aims to gather important contributions by researchers from academia and industry in gel science applied to foods. The main objective is to provide an overview of the main findings and new challenges in the area of food gels. Since the new developments involve a multidisciplinary research approach, we are seeking submissions focused on new materials, innovative processing and characterization technologies, and final food applications. We expect that key actors in the field address this discussion according to their particular areas of expertise, covering different types of gels such as hydrogels, oleogels, emulges, nanogels, etc.

We look forward to receive your submissions to this anticipated collection of exciting, high-quality papers covering the latest findings in gel science.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Gels is an international peer-reviewed open access monthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
