Special Issue Information

Dear Colleagues,

The consumption of wild and cultivated edible mushrooms has increased considerably in recent years due to their nutritional value, given that they are an important source of phenolic compounds, vitamins, proteins, amino acids, and fiber. Edible mushrooms have a wide range of useful pharmacological properties and are also rich in the essential elements required for certain biochemical reactions and cellular functions. However, their fruiting bodies can also assimilate and accumulate heavy metals and metalloids from soils, which are amongst the most hazardous and harmful pollutants for humans due to their persistence and ability to bioaccumulate throughout the food chain.

This Special Issue, entitled "Determination of metals and extraction of bioactive compounds from mushrooms", aims to present recent research on any aspect related to:

  1. Information about the mineral and bioactive compound content of the most frequently consumed fungi species, whether wild or cultivated.
  2. The development of analytical methodologies for the extraction of bioactive compounds in mushrooms of interest as food supplements or functional products.
  3. The evaluation of the nutritional value or health risks associated with the consumption of mushrooms from specific geographical locations.

Reviews, original research, and communications covering all the related topics will be welcome.
