Special Issue Information

Dear Colleagues,

Bio-impedance spectroscopy (or dielectric spectroscopy) is the measurement of the complex impedance of a biological sample over a range of frequencies using time-varying electric, magnetic or electromagnetic excitations. The purpose is to use the specifics of the measured spectra to obtain information on the physical, chemical, or cellular properties of the sample. The shape of the spectra is typically composed of multiple dispersion regions that mark the dominance of different energy transmission mechanisms depending on frequency; from ionic diffusions at low frequencies to cellular capacitances or polarization at radio frequencies, to molecular relaxations in the microwave range.

It has long been shown that characteristics of these dispersions correlate to properties such ripeness and injury, across a range of fruits, vegetables, meats, and other foodstuffs. However, the picture is far from complete. There are still many unknowns on how cellular change, decay, damage, or other physiological processes impact the dispersions, and the reverse, how to use the shape of the spectra to make inferences about these properties. Moreover, there is still much research required to derive from this fundamental science, new instrumentation and tools for agri-food systems; potentially improving quality yields and reducing losses in production processes from farm to fork.

This Special Issue “Applications of Bio-Impedance Spectroscopy in Agrifood Systems and Food Analysis” welcomes contributions of original research or comprehensive review submissions about reporting the latest research progress and development in the analytical field of Bio-impedance Spectroscopy.
