Round 1

Reviewer 1 Report

The submitted paper 'Effects of Metal Concentration, pH, and Temperature on the Chlorophyll Derivative Content, Green Colour, and Antioxidant Activity of Amaranth (Amaranthus viridis) Purees' is interesting, rather well-documented. However, some correction and explanations are required:

lines 165-166 please slighty improve the sentence: measurement of ... was measured

lines 174 and 195 - please add the value of g (centrifugation)

line 215 The TPTZ were measured in proportions of 10:1:1 - what does it mean? it should be corrected

table 1 - is it correct such high value of standard deviation? SD of analytical measurements results are rather low

line 365 - bracket should be added

Fig. 6  - abscissa - subscript in chemical formulas should be applied

References - abbreviations of the journal names should be corrected

reference 39 (authors paper) should be corrected according to Guidelines for Authors

Reviewer 2 Report

The Manuscript ID: applsci-1999174 Effects of Metal Concentration, pH, and Temperature on the Chlorophyll Derivative Content, Green Colour, and Antioxidant Activity of Amaranth (Amaranthus viridis) Purees” requires revision before accepted for publication. The specific comments are given below.

1.     Abstracts needs to have more precision as in the current form it appears. In the abstract, please add an indication of the achievements from your study that is relevant to the journal scope.

2.     Provide significant words which are more relevant to the work in a logical sequence as ‘keywords’.

3.     The "Introduction" section should follow the state of the art of this field and review what has been done, for supporting the research gap and the significance of this study. Please improve the state of the art overview, to clearly show the progress beyond the state of the art.

4.     In the last paragraph of the introduction, clearly indicate the research hypothesis.

5.     In Chapter 2.1, it would be useful to describe a physico-chemical characterization of A. viridis.

6.     More details should be included in the conclusion.

7.     It is also recommended to discuss and explain what should be the appropriate policies based on the findings of this study.

Reviewer 3 Report

Dear Authors:

The manuscript "Effects of Metal Concentration, pH, and Temperature on the Chlorophyll Derivative Content, Green Colour, and Antioxidant Activity of Amaranth (Amaranthus viridis) Purees"  by Amin et al has demonstrated that metal concentration, pH, and 522 temperature can influence the stabilisation process of the green colour, chlorophyll 523 derivative content, and antioxidant activity of amaranth purees. I just have a few suggestions.

1. Some background information or references are missing. In introduction, please add more background information about ROS, which plays an important role in many diseases. especially mitochondria damage and cancer development. It can emphasize the importance of your article. (Please cite: 1. An Epigenetic Role of Mitochondria in Cancer. Cells 2022, 11, 2518. https://0-doi-org.brum.beds.ac.uk/10.3390/cells11162518
