Special Issue Information

Dear Colleagues,

Food safety is intimately but not exclusively related to biological risk associated to a wide diversity of foodborne pathogens, including bacteria, fungi, viruses and parasites. Although cleaning and disinfection (C&D) procedures as well as food decontamination processes are commonly used in food companies, a large number of foodborne outbreaks still occur around the world. In 2021, the EFSA reported 4,005 cases in Europe and the FDA more than 1,600 cases in the USA. There is, therefore, a continual need to optimize or design new processes to fight against foodborne pathogens that can not only contaminate foodstuffs, but also surfaces encountered in food companies (floors, walls and machine surfaces). This Special Issue is dedicated to recent advances and original research in the field of food decontamination processes (thermal and nonthermal processes) and C&D procedures. Particular attention will be paid to sustainability indicators such as energy consumption/recycling and water consumption. With the efficiency of such processes and procedures on biological risks also being a key factor to optimize and design new ones, manuscripts that focus on their impact on physiology (as well as viability and virulence) and, more generally, the stress response (as omics) are welcome. Studies may or may not be related to the One Health paradigm.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
