Dear Colleagues,

This Special Issue delves into the intricate relationship between metabolic processes and toxicology in the context of food safety. Researchers and experts contributing to this issue explore a wide range of topics to enhance our understanding of how metabolic pathways influence the presence and effects of harmful substances in food. By investigating the metabolic fate of food contaminants, elucidating their toxicological implications and developing advanced detection techniques, this Special Issue aims to advance the field of food safety.

This Special Issue aims to collect up-to-date studies on the following topics:

  • Metabolism and bioactivation of foodborne toxins;
  • Pharmacokinetics of food contaminants in the human body;
  • Mechanisms of toxicity of common food additives and preservatives;
  • Genotoxicity and carcinogenicity of food-related compounds;
  • Emerging contaminants in the food chain and their metabolic pathways;
  • Influence of the gut microbiota on food toxin metabolism;
  • Metabolomics approaches for studying food toxicity;
  • Novel strategies for risk assessment and management in food safety;
  • Mass-based detection methods for metabolites.

We invite authors to submit both original research studies and critical review papers to this Special Issue of Foods.
