Interests: My main area of interest involves the development and validation of chromatographic methods (GC/MS, HPLC/MS, HPLC-UV) including different sample treatments for the detection, separation and quantification of volatile compounds, toxins, drugs and pesticides in different matrices. Another area of my interest is based on the structural organic analysis and study of polymorphism of newly synthesized organic compounds, by using spectroscopic, spectrometric, nuclear magnetic resonance and thermal analysis techniques. My main current research area is focused on the application of chromatographic/spectrometric methods to the study of the presence of mycotoxins in different foods and biological matrices.

Special Issue Information

Dear Colleagues,

Some beverages are prepared from raw materials that can be contaminated by fungi, such as cereals, fruits and dried fruits, coffee, and grapes, among others. When exposed to adequate conditions in terms of temperature and humidity, these fungi produce secondary metabolites known as mycotoxins. Nowadays, mycotoxins’ presence in foods and their relationship with human health represent a matter of special concern. In 2018, a Special Issue titled “Mycotoxins in Beverages” was published. This Special Issue included three research articles and three reviews and covered very different aspects of this topic. Now, MDPI is offering a new opportunity for researchers to publish their works on this interesting theme. As was the case for the first Special Issue, articles or reviews related to the presence of these toxins in beverages, the effects of beverage processing on mycotoxin contamination, the impact of their presence on human health, and analytical methodologies used for their determination in beverages are welcome.

Manuscript Submission Information

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Beverages is an international peer-reviewed open access quarterly journal published by MDPI.
