Dear Colleagues,
Chemical contaminants, such as pesticides, veterinary drugs, mycotoxins, persistent organic pollutants (POPs), dioxins, and heavy metal ions, pollute foods and pose serious risks to humans.
Therefore, developing methods to detect chemical hazards and to evaluate their adverse effect on human health is crucial. In recent years, various analysis methods, such as high-performance liquid chromatography, chromatography–mass spectrometry, biological detection, electrochemical and optical sensors, and enzyme and immunological assays, have been developed successively for food contaminants testing. Additionally, risk assessments for food contaminants, based on the identification of potential food hazards; the evaluation of population exposure; and the determination of safe levels are methods that have also received increasing attention due to their potential to prevent any impacts on citizen health.
This Special Issue welcomes original scientific articles and quality reviews that explore topics such as novel methods for contaminant rapid detection, food safety analysis, as well as risk assessments for classical and emerging chemical hazards.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
